"Paneer Basmati Pilaf--Paneer Pulao" from Potting Shed, The, Acton, ME
Stephen Ceideburg 2 c Basmati rice 8 oz Paneer (see recipe) 4 tb Light vegetable oil 1/2 c Cauliflower florets 1 c Diagonally sliced carrots 1 c Chopped red or green bell pepper 2 tb Cashew halves 2 tb Raisins 2 Bay leaves 1 Inch piece cinnamon stick 8 Whole cloves 1/2 ts Black peppercorns 3 c Water 3/4 c Canned tomato sauce 2 ts Salt In the traditional version of this dish, the rice, paneer and vegetables all cook together. I like the vegetables to remain crunchy, however, so I cook them separately, then stir them into the rice toward the end of its cooking time. Serve this subtle pilaf lamb chops or spicy stews. Wash rice thoroughly. Place in a bowl, cover with water and let soak 15 minutes. Drain. Cut paneer into cubes. Brush with 1/2 tablespoon of the oil and broil 2 minutes per side. Set aside. Heat remaining oil in a Dutch oven over medium high heat. Add cauliflower, carrots and peppers. Stir fry for 5 minutes, or until edges of peppers start to brown. Remove with slotted spoon and set aside. Reduce heat to medium. Add cashews and fry until light golden; remove and set aside. Add raisins and fry until plump; remove. Add whole spices to the pan. Stir and cook 1 minute. Add rice, increase heat to medium high, and stir fry until rice is well coated with oil and begins to glisten, about 5 minutes. Add water, tomato sauce and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 12 minutes. Uncover and gently stir in vegetables and paneer, Cover and cook 5 minutes longer. Remove from heat and let stand, covered, for 10 minutes, Fluff rice gently with a fork and transfer to a serving dish. Garnish with fried raisins and cashews. PER SERVING: 365 calories, 11 g protein, 46 g carbohydrate, 15 g fat (6 g saturated), cholesterol (not available), 716 mg sodium, 2 g fiber. DESCRIPTION: The Potting Shed Restaurant is an exceptional place to enjoy a delicious breakfast or lunch. The service is incredible, with very pleasent waitresses. It is a family run business, and is part of the Apple Valley Campground, Crabby Appletons Icecream Shop, A banquet hall, The Apple Core Craft Shop, The Smith's Red Apple Farm, and acres of buetifull apple trees. The atmosophere is perfect. Overall the restaurant and its family businesses around it is a great place to bring a family. I would recommend it to anyone for an experience unlike no other.

Don't BOTHER
DESCRIPTION: Saw a "tacky" sign advertising "New York Pizza" and thought it might be good. Our order was taken, one plain cheese pizza, one with peppers and oninons. After 30+ minutes, the cheese pizza was served...lukewarm at best. We were told the other would be out momentarily. Well 15 minutes later, the waiter returned apologizing, saying that there had been a problem with the pizza and they needed to remake it. He did offer to remove the cost from my bill. Finally after 20 additional minutes, the pizza was serve. It was hot and delicious. The poor waiter, a nice young man, was apologetic each time he came to the table. It is unfortunate, and a poor business practice to send the waiter to deliver the news. The owner or manager should have discussed the issue with us. Not doing so was cowardly. Waiting over a hour for pizza is unacceptable. If they are going to advertise pizza, they should know how to serve it. Even if they had come to us immediately, served the cheese pizza HOT, with an explanation about the other pizza, we would have accepted it. But to hold off serving the first one, then serve it only warm is rotten customer service. Another time, we went in for dinner. They explained up front that the credit card connection was down. We asked if a check would be acceptable since we didn't have cash. Only in state checks are accepted. (We are from Mass.) We were about to leave when they said they would accept the card and run it manually. WELL WHY DIDN'T THEY SAY THAT IN THE FIRST PLACE! We ate an average meal, paid and left. When my bank statement arrived, they had charged me TWICE for the meal. I called, they apologized and said they would fix the problem. They did. I went to the Potting Shed website where the owners claim to be experienced business people. Well, their experience must have been all bad because since they took ownership, the food and service has deteriorated. It's too bad, the Smiths had a good thing going!

Great Lunch for a Great price
DESCRIPTION: We were up in the area looking at real estate. We stopped in at the Potting Shed and ordered lunch for two including drinks, the total came to $11. We were pleasantly surprised. It was excellent and the service was wonderful too.
