2 lg Sweet potato

1 lb Pork

1 Onion

2 sl Ginger root

2 tb Sesame oil

1 tb Soy sauce

1/2 tb Salt optional

ds Pepper 1 c Chicken stock

2 tb Curry powder

Oil for stir fry Peel sweet potatos and cut into 1/2 inch slices. Cut pork in 1/2 inch cubes. Slice onion thinly. Mince ginger root Heat oil and deep fry sweet potatos until golden. Drain on paper towels. Heat remaining oil. Add ginger root and onion and stir fry a few times. Add pork and brown lightly on all sides. Stir in soy sauce, salt and pepper. Then add stock and curry powder and bring to a boil, stirring. Add deep fried potatos and simmer, covered, until pork is done, about 30 40 minutes.
